Springtime is finally here! We all have nature blossoming and sunnier days to look forward to in the coming weeks. Strawberry Beet Smoothie Bowl
This beets and berries combo offers the perfect amount of sweet tang and earthy flavor to any spring day! This is a high protein, high fiber, vitamin-rich smoothie bowl with an abundance of nutrients for overall health. Ingredients include:
- 1 cup of frozen sliced strawberries
- 30 g (vegan) vanilla protein powder (optional)
- 1 small fresh chopped beet
- 1/2 cup fresh chopped zucchini (optional)
- 1 cup plant-based milk of choice
- 1/2 a frozen banana
Add all of the ingredients to a blender and blend until smooth and creamy. Add to bowl along with toppings of your choice, such as granola, chia seeds, flaxseeds, kiwi, and/or nuts. (Full recipe: Running on Real Food).
Spinach Artichoke Zucchini Bites

Spinach, artichoke, and zucchini! That is a lot of green, healthy, deliciousness in one dish. This warm, fun-sized treat gives you flavor and savor all in one bite. Ingredients include:
- 4 oz. softened cream cheese
- 2/3 cup shredded mozzarella
- 1/4 cup grated Parmesan
- 1/2 cup drained and chopped artichoke hearts
- 1/2 cup frozen spinach, thawed and drained
- 2 tbsp. sour cream
- 2 cloves garlic, minced
- Crushed red pepper flakes (optional)
- 3 medium zucchini, cut into 1/2 in. rounds
Preheat the oven to 400°. Combine cream cheese, mozzarella, parmesan, artichokes, spinach, sour cream, garlic, and crushed red pepper into a bowl. Season the mixture to your liking. Spread a tablespoon of the mixture on top of each zucchini round. Bake for approx. 15 minutes. Let stand for 1 to 2 minutes and then serve. (Full recipe: Delish)
